Seasonality:
While white cauliflower is the most common, in recent years other types of cauliflower have become more popular. Their heads are orange, purple or green. Coloured cauliflowers have the same visual characteristics as white cauliflower. The centre resembles a compact, tightly grained ball, surrounded by large green leaves.
Like white cauliflower, we do not eat the flower of the vegetable but its bud. If left to grow, this bud would become a flower.
Coloured cauliflowers taste quite similar to white cauliflower, both fresh and mild. Whatever their colour, cauliflowers can be eaten raw or cooked. And since their colour is natural, they retain it even after cooking to brighten up your dishes!
Cultivating cauliflower
These varieties of cauliflower are planted by hand during the winter. Green cauliflower is the earliest of these. It can be harvested from May until October/November. Purple and orange cauliflowers are harvested from July to October. All of them are harvested by hand. This technique allows farmers to select the best heads. Also, they are packed immediately in the field to limit handling and ensure their freshness.
Our producers
The partner farmers of the Pouliquen Group are all members of Prince de Bretagne. They have exceptional expertise in cultivating brassicas and cabbage that has been acquired over generations. Their farms are located on the north coast of Brittany, in an area often referred to as the “golden belt”, in reference to the quality of its market garden production. Our partner producers who grow coloured cauliflower are members of the SICA, Les Maraîchers d’Armor and Terres de Saint-Malo agricultural cooperatives.
